
A snack I’d love to enjoy again soon. Homemade sourdough bread (by my daughter, Alex) is toasted, spread generously with kesong puti and topped with tomato jam.
Kesong puti (literally, white cheese) is a soft, unaged cheese made from the milk of carabao (water buffalo). Handmade, it used to be available in markets when I was a child. Although commercially produced kesong puti can be found in some groceries, the best is still the artisanal kind that comes wrapped in banana leaves.
The tomato jam was made by my husband, Speedy, using cherry tomatoes.
