Banana bread baked in a muffin pan. No flour. No sugar. But it isn’t sugar-free because banana contains sugar. So do the peanut butter and chocolate that go into the batter.
Is it good? Yes. But I do like my banana bread (it’s really a cake despite its American name) to be more light and airy. Not possible without flour or a substitute for flour despite the addition of baking powder to the cake batter. Alex will bake another batch and I asked her to include ground oatmeal. We’ll see how that turns out.
