Most of this newsletter’s subscribers are in the northern hemisphere where the snow has not yet thawed. Meanwhile, it’s the end of summer in the southern hemisphere.
But here in the tropical Southeast Asia, the days are getting longer. Just two weeks ago, it got dark a little after six. The past few days, there’s still sunlight at half past six. A sure sign that the cooler (I won’t call use the word cold because it never really is) Christmas weather is coming to an end. The hot and dry season will begin early and last longer. El Niño, we are told. Time to dig up old summer cocktail drink recipes in the old blog’s archive and share them once more.

What’s new in the blog?

German-style crispy pork knuckle (schweinshaxe) – Unlike Filipino crispy pata which requires the pork to be simmered in water until tender before roasting or air frying, cooking crispy pork knuckle German-style ditches the simmering part. The uncooked pork goes into the oven and roasts until the meat is tender and the skin is crisp. Get the recipe.

Cheese and corn dip with bacon and sausage – Cream cheese, shredded cheddar and sour cream are stirred with sweet corn kernels, browned bacon and sausage, chopped bell peppers and onion. Get the recipe.

Spanakopita-inspired spinach, bacon and cream cheese pot pie – Think spanakopita but with cream cheese instead of the traditional ricotta. And, rather than baking a large pie, we have two single-serve savory pies cooked in pristine white ceramic ramekins. Get the recipe.

Fried chicken with buttery sweet sour sauce – Still using vinegar to make sweet sour sauce? Try fresh citrus juice. And, instead of plain water, opt for chicken broth. For even more flavor, stir in butter. Get the recipe.
